Options +Indexes tells the server that its okay to list the contents of a folder if it is called, generally this is a bad thing.
Options +FollowSymlinks is short hand for Follow Symbolic Links and it tells apache to follow a symbolic link while looking for a file. If you are using mod_rewrite, it requires followsymlinks to be enabled, or it will dump with a 500-Server Error.
